Cacao & Peanut Butter Energy Balls

Firstly, a huge thank you to all the lovely comments I've received since posting my first cooking video on social media! I was a little nervous about sharing it but I've had so much positive feedback there will definitely be more to come. From doing the first one I now realise how loud the rooks are squawking in the background and that you would be able to hear me whilst the food processor is on. You've also made lots of requests for different recipes you would like me to make so hopefully they'll all be coming up.


Fingers crossed I'll be back to doing my healthy take-away next week which is really exciting. It's been quite nice to have a couple of weeks of down time and do some things that I don't normally have time for...I've even been painting which I haven't done since school. I won't be giving up my day job however to become an artist so don't worry!



 

If you haven't had energy balls before they are the perfect snack to have in the fridge. They are a great pick me up to have with your morning coffee or to boost you through the afternoon. You can make so many different combinations but this is a great recipe to get you started.


Cacao & Peanut Butter Energy Balls

Ingredients

280g medjool dates, stones removed.

80g oats

200g cashew nuts

x2 heaped tbsp peanut butter

x1 tbsp cacao powder, plus a little extra for rolling

Splash of water


Equipment

Food Processor


Method

Place all the ingredients into your food processor apart from the water and blitz until it's in small pieces. Pour in a little water and keep whizzing until the mixture starts to stick together.


Tip into a bowl and pinch off small lumps of mixture and roll into balls. Then roll them in the extra cacao powder. Place in the fridge to harden up a little.


These will last for ages in an air tight tub in the fridge.


Substitutions

Dates - any juicy dried fruit e.g. apricots/sultanas

Cashews - any nuts

Peanut Butter - any nut butter or melted coconut oil
